Strawberry Spinach Salad 02_1-250x143With spinach, strawberries, tomatoes and cucumbers on the EWG’s Dirty Dozen List, it is important to purchase organic to reduce your exposure to chemical fertilizers and pesticides.

Makes 2 salads

2 cups baby spinach (approximately)
1 pint strawberries
1 avocado
1 can chickpeas, rinsed
1 cucumber
1 pint cherry tomatoes
2 oz goat cheese
2 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
Sea salt and freshly ground pepper

1. Wash and cut all produce into bite-sized pieces.
2. Toss all ingredients in large bowl with oil, vinegar and salt and pepper to taste.
