Makes 2 salads<\/p>\n
Ingredients:
\n2 cups baby spinach (approximately)
\n1 pint strawberries
\n1 avocado
\n1 can chickpeas, rinsed
\n1 cucumber
\n1 pint cherry tomatoes
\n2 oz goat cheese
\n2 tablespoons balsamic vinegar
\n2 tablespoons extra virgin olive oil
\nSea salt and freshly ground pepper<\/p>\n
Directions:
\n1. Wash and cut all produce into bite-sized pieces.
